CRANBERRY BLISS BARS ARE SO GOOD!
I’m sure most of you reading this have had Starbuck’s cranberry bliss bars, but if you haven’t you should still try this recipe. I love these things! I know you’re probably also asking, “Kelley, don’t you only eat ‘healthy’ foods?” The answer is, not always! I like all sorts of food, and I only make these around the holidays. I made my first batch a couple of years ago, and made them again last night for a special outing. They’re always a hit.
These not only taste delicious, but they’re also festive!
I got the recipe from Belle of the Kitchen. (Nope, can’t take credit for this recipe. Only the small changes I made.) I followed the recipe as written with the exception that I didn’t have orange extract, so I used about a teaspoon of orange zest. (It not only still tastes good, but it adds even more color that I think contrasts beautifully against the white chocolate and red cranberries.) I also don’t love cream cheese, so basically any recipe that calls for cream cheese, I use mascarpone cheese. It’s sweeter and smoother tasting to me, and I love it! I highly recommend the sub.
People always love these. So here you go.
1 cup butter, melted
1 1/2 cups packed brown sugar
1 teaspoon orange zest
1 teaspoon vanilla extract
1/2 teaspoon ground ginger
1 teaspoon baking powder
1/2 teaspoon salt
2 cups all purpose flour
1 cup white chocolate chips
3/4 cup dried cranberries
8 oz tub of mascarpone cheese
1 1/2 cup powdered sugar
1 teaspoon orange zest
1/2 teaspoon vanilla extract
1/3 chopped dried cranberries
small handful of white chocolate chips
- Preheat oven to 350. Line a pan (I used 13×9) with parchment. (I also sprayed with Baker’s Joy.)
- Combine flour, salt, ginger, and baking powder. In separate bowl, beat melted butter and brown sugar with an electric mixer. Add eggs, orange zest, and vanilla and mix well. Add dry mixture in batches mixing until just combined. By hand, fold in the white chocolate chips and cranberries.
- Spread into your pan and bake for 18-22 minutes. This time was suggested by Belle of the Kitchen in her recipe, and I found it took the 22 minutes. Just don’t over cook them. Allow to completely cool before icing.
- For icing, combine the mascarpone, powder sugar, orange zest, and vanilla extract until smooth. Spread over cookie base and sprinkle chopped dried cranberries. In a small bowl add some white chocolate chips and melt in the microwave in 30 second increments. Use a fork to stir between times and then drizzle with the fork over the top.
That’s it! I placed mine in the fridge for a little while to let them set up a bit for easier cutting. You just remove the whole sheet with the parchment paper and can just cut it right there. Super easy and so delicious. I can’t rave about these Cranberry Bliss Bars enough. Take these to your next gathering and let me know what everyone thought.
